Texas had barbecue, breakfast tacos, and more Michelin attention than it knew what to do with. What it didn’t have was authentic khachapuri.

That struck us as a problem worth solving. Georgia is a country of 4 million people with a cuisine most Americans have never encountered, built around a single idea: that the table is where everything important happens. We opened Bread Boat on East 7th to bring that table to Texas — and to eat properly ourselves.

We baked the first boats for people who had no idea what they were ordering. Most of them came back.

The recipes

Chef Kopaliani cooks the way her family cooks.

Our chef and co-founder brought the recipes with her — not from a book, from a kitchen. The Adjaruli is the one Georgians grew up with: cheese, egg, butter, a crust you tear off in pieces.

Then she started inventing. The half-and-half boats — traditional on one side, slow-braised beef or spiced beans on the other — don’t exist in Georgia. They exist because she wanted to see what would happen. Kubdari from the Svaneti mountains and Lobiani from Racha are the ones that do go back centuries.

Everything is hand-shaped and baked to order, which is why it takes a while and why it’s worth it.

The supra

Nobody eats a bread boat alone.

Georgian meals are built around the supra — a long table, too much food, and a tamada, the toastmaster, who stands up through the night to say something true about everyone present. It goes on for hours. It is not efficient.

We can’t give you a full supra at lunch on a Tuesday. But we can give you a boat that’s obviously meant for two, a table where the food arrives when it’s ready rather than when it’s convenient, and a room where nobody minds if you’re still there an hour later.

Order at the counter. Sit on the patio if the weather allows. Stir the egg in yourself.

We’re opening a second Bread Boat at 3835 Richmond Ave. Same recipes, same oven-to-table timing, a new room and a new city that already knows how to eat.
