No one in Austin was making real khachapuri. So we did.
We opened in a corner of East Austin that already knew how to eat, and brought it something it didn't have: khachapuri, the cheese-filled bread boat Georgians have been baking for centuries.
The room is small and it gets loud. At lunch that's laptops and adjaruli. By Friday it's wine, meat pies, and a lot of first-timers being told, gently, to stir the yolk in while it's still hot.
Ten minutes from downtown, a short walk from Plaza Saltillo station.
