Khachapuri is a boat of blistered dough filled with molten cheese, baked with egg and butter you stir into a swirl at the table while it’s still hot. You tear off the crust and dip. It’s the most fun you can have with bread.

Beyond it: Kubdari stuffed with spiced beef from the Svaneti mountains, Lobiani with kidney beans and smoky bacon, walnut-dressed Pkhali, and honey-walnut Ideal Cake. No seed oils, no bleached flour.
